  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper adjust to taste
  • 1 tablespoon Balsamic Vinegar red wine vinegar can be used as a substitution
  • 1 teaspoon Thyme fresh rosemary or oregano can also work
  • 1 sheet Puff Pastry ensure it’s thawed
  • 6 ounces Goat Cheese for a flavor variation, feta cheese can be used

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil and butter over medium heat. Add onions, sugar, salt, and pepper. Cook undisturbed for 5 minutes, stir occasionally for another 15 minutes until golden. Add balsamic vinegar and thyme, cook for an additional 5 minutes.
  2. Preheat oven to 400°F (200°C). Roll out puff pastry to about 1/8-inch thick. Cut into 6 rectangles, leaving a 1/2-inch border.
  3. Distribute the caramelized onion mixture over the puff pastry rectangles. Crumble goat cheese on top and sprinkle extra thyme leaves.
  4. Bake for 15 minutes until the pastry is golden brown. Check every 2 minutes near the end to prevent burning.
  5. Allow to cool slightly for 5 minutes before serving. Enjoy warm with a light salad or wine.
