  • 1 packet taco seasoning customize salt and heat
  • 1 cup chunky salsa opt for chunky salsa for texture
  • 1 can black beans drained; could substitute with pinto beans
  • 1 can sweet corn undrained; frozen corn is a great alternative
  • 1 can diced tomatoes with green chiles regular diced tomatoes can also be used
  • 1 pack ready rice swap for cooked brown rice or cauliflower rice
  • 1-2 cups shredded Colby Jack cheese for the best meltiness, shred your own

  • to taste fresh cilantro to add a fresh touch
  • 1 sliced avocado provides creaminess
  • to taste sour cream for balancing spices
  • to taste crushed tortilla chips for added crunch

Method
 

Directions
  1. Heat a large, oven-safe skillet over medium heat for about 2 minutes and spray with cooking spray.
  2. Add ground beef and diced onion. Cook for 8-10 minutes until the beef is browned and the onion is translucent.
  3. Stir in taco seasoning and chunky salsa. Cook for another 2-3 minutes, ensuring everything is well combined.
  4. Incorporate black beans, sweet corn, and diced tomatoes with green chiles. Stir and let it simmer for 5-6 minutes.
  5. Mix in ready rice until fully combined. Let it cook for another 2-3 minutes until warmed through.
  6. Top with shredded Colby Jack cheese and place under the broiler for about 1 minute until melted and golden.
  7. Garnish with fresh cilantro, sliced avocado, sour cream, or crushed tortilla chips. Serve hot.
