Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine mashed sweet potato, egg, maple syrup, melted coconut oil, and vanilla extract until smooth.
  3. Stir in rolled oats, almond flour, cinnamon, nutmeg, baking soda, and salt until combined.
  4. Fold in optional chopped nuts or dried fruits.
  5. Portion out about 2 tablespoons of dough for each cookie onto the prepared baking sheet, flattening slightly.
  6. Bake for 12-15 minutes until golden on the bottom.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
