Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients while the oven heats.
  2. In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts until golden brown, about 4-5 minutes on each side.
  3. Remove chicken, add garlic to the skillet, sauté for 30 seconds, then add mushrooms and cook for 5-7 minutes.
  4. Add spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Lower heat, mix in cream cheese and chicken broth until combined into a creamy sauce. Season with salt and pepper.
  6. Return chicken to the skillet, cover with sauce and sprinkle with Parmesan cheese.
  7. Cover and bake for 20-25 minutes, until chicken is cooked to 165°F (75°C) and cheese is golden.
  8. Let rest for 5 minutes before serving warm.
