Step-by-Step Instructions
  1. Boil the Noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook until al dente, about 8-10 minutes. Drain and spread on towels.
  2. Prepare the Chicken Filling: Combine shredded chicken, cream cheese, mozzarella, and hatch green chiles in a bowl. Season with salt and pepper.
  3. Make the Cheese Sauce: Melt butter in a skillet. Whisk in flour to create a roux, cook for 1-2 minutes. Gradually add milk and whisk until thickened. Stir in Parmesan until smooth.
  4. Preheat the Oven: Set oven to 350°F (175°C). Prepare your baking dish for layering.
  5. Layer the Lasagna: Start with cheese sauce on the bottom. Add noodles, half of the chicken filling, then repeat layers. Top with noodles and remaining cheese sauce.
  6. Bake the Lasagna: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  7. Let it Rest: Allow lasagna to rest for 15 minutes before slicing and serving.
