Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Grease a baking dish with olive oil.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.
  3. Add 1 cup of halved cherry tomatoes and 4 cups of fresh baby spinach to the skillet. Cook for 2-3 minutes until spinach wilts.
  4. Pour in 1 cup of heavy cream and add 4 ounces of cream cheese. Stir in 1/2 cup of grated Parmesan, 1 teaspoon of dried Italian seasoning, and 1/2 teaspoon of paprika. Simmer for 3-4 minutes.
  5. Arrange 1 pound of shrimp in the baking dish and sprinkle with salt and pepper.
  6. Pour the cream sauce over the shrimp, coating them evenly.
  7. Sprinkle 1 cup of shredded mozzarella over the dish and bake for 12-15 minutes until the shrimp are pink and the cheese is bubbly.
  8. Garnish with freshly chopped parsley and serve hot.
