For the Sauce
  • 2 cups Ripe Tomatoes Canned diced tomatoes can be used as a shortcut.
  • 1 cup Heavy Cream For a lighter option, substitute with Greek yogurt or coconut milk.
  • 3-4 cloves Fresh Garlic Use whole cloves for best results.
  • 2 tablespoons Olive Oil Extra virgin olive oil is preferred.
For Finishing Touches
  • 1 bunch Basil Fresh basil is ideal.

Method
 

Cooking Steps
  1. Boil a large pot of salted water and cook spaghetti or fettuccine until al dente, about 8-10 minutes. Drain in a colander.
  2. Heat olive oil over medium heat in a large skillet. Add minced garlic and sauté until golden brown, about 1-2 minutes.
  3. Add diced ripe tomatoes, a pinch of salt, and freshly cracked pepper. Simmer for about 5 minutes.
  4. Reduce heat to medium-low, pour in heavy cream, and simmer for 3-4 minutes until thickened.
  5. Add the drained pasta to the skillet and toss for about 2 minutes until coated in sauce.
  6. Serve garnished with fresh basil and optionally Parmesan cheese.
