Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the diced yellow onion and sauté for about 4 minutes until translucent.
  2. Add 2 minced garlic cloves and sauté for an additional 30 seconds until fragrant.
  3. Pour in 2 cans of low-sodium chicken broth and 1 can of diced green chilies. Add spices and bring to a boil, then reduce to medium-low and simmer for 15 minutes.
  4. Rinse and drain 2 cans of cannellini beans. In a food processor, combine 1 cup of beans with 1/4 cup of the broth and puree until smooth.
  5. Stir the pureed bean mixture back into the pot along with 8 oz of Neufchatel cheese and 1 ¼ cups of corn. Continue to simmer for another 5-10 minutes.
  6. Finally, add 2 ½ cups of shredded rotisserie chicken, lime juice, and chopped cilantro. Stir well and warm for about 2 minutes.
