Step‑by‑Step Instructions
  1. Gather all your ingredients for the tacos. Dice onion, mince garlic, and measure spices: cumin, chili powder, and chipotle pepper. Rinse and drain black beans.
  2. In a large skillet, heat oil over medium heat. Add onions and sauté for 5-7 minutes until golden. Stir in garlic, chipotle pepper, and spices, and cook for an additional 1-2 minutes.
  3. Add rinsed black beans and vegetable stock to the skillet. Mash the beans slightly and simmer on medium heat for about 5 minutes.
  4. Wrap tortillas in a damp paper towel and microwave for 30 seconds. Brush both sides with oil.
  5. Lay warm tortillas flat, add black bean filling, sprinkle cheese, and fold. Place on a parchment-lined baking sheet.
  6. Preheat oven to 400°F. Bake tacos for 15-20 minutes until golden and crispy, flipping halfway through.
  7. Allow tacos to cool for a few minutes. Garnish with toppings before serving.
