- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Wash the potatoes thoroughly and keep the skin on.
- Slice each potato thinly, about 1/8 inch apart, without cutting all the way through, using wooden spoons or chopsticks to help.
- In a medium bowl, whisk together melted butter, minced garlic, grated Parmesan cheese, fresh parsley, salt, and black pepper until well combined.
- Fan out the sliced sections of each potato and generously apply the garlic butter mixture all over, ensuring it seeps into the slices.
- Place the potatoes cut-side up on the baking sheet and bake for 30-40 minutes until golden brown and crispy. Brush with more garlic butter halfway through.
- Once baked, let the potatoes cool for a couple of minutes. Garnish with extra parsley if desired and serve immediately.
