- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals until melted and smooth, about 1 to 2 minutes.
- In a large mixing bowl, combine the mixed nuts, rolled oats, honey or maple syrup, and vanilla extract. Add half of the melted chocolate and stir until coated.
- Pour the mixture into the prepared baking dish and press down firmly. Drizzle the remaining melted chocolate on top.
- Bake for 15 to 20 minutes until golden brown around the edges. Let cool in the pan.
- Once cooled, lift the parchment paper to remove the bars and cut them into squares or rectangles.
