- Preheat your oven to 350°F (180°C) and prepare a muffin tin by greasing it or lining it.
- Blend the cottage cheese until smooth. Set aside.
- In a mixing bowl, whisk together the blended cottage cheese, eggs, coconut sugar, honey, and melted coconut oil until well-combined.
- In another bowl, whisk together the flour, chocolate protein powder, baking powder, baking soda, and salt. Gradually fold into the wet mixture until just combined.
- Stir in the milk and fold in the chocolate chips until evenly distributed.
- Fill each muffin cup to the top with the batter, and sprinkle additional chocolate chips on top if desired.
- Bake for approximately 30 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
