Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the creamy Boursin cheese, fresh lemon zest, lemon juice, and minced garlic until smooth.
  3. Halve the multicolored cherry tomatoes and mince the red onion.
  4. Drizzle olive oil in the baking dish and layer fresh lemon slices across the bottom.
  5. Place the salmon fillets on top of the lemon slices and surround with the halved cherry tomatoes.
  6. Spoon the creamy Boursin sauce over each fillet.
  7. Scatter the minced red onion over the tomatoes and salmon, then drizzle with remaining olive oil.
  8. Bake for approximately 20 minutes or until salmon flakes easily and reaches internal temperature of 135-140°F.
  9. Switch to broiler setting for the last 2-3 minutes for browning.
