Step-by-Step Instructions
  1. In a medium bowl, combine Greek yogurt, chopped parsley, tarragon, chives, lemon juice, and a pinch of salt and pepper. Stir the mixture for about 2–3 minutes until well blended and creamy.
  2. If preparing in advance, cover and refrigerate the herb spread for up to 2 days.
  3. Wash and slice the cucumber into thin rounds. Rinse the microgreens or sprouts under cold water.
  4. Slice a ripe avocado in half, remove the pit, and cut it into thin wedges.
  5. Spread the creamy herb mixture on both sides of the bread slices. Layer avocado, cucumber, and microgreens.
  6. Serve the sandwich immediately for the best texture and flavor.
