- Start by peeling and cubing about 2 pounds of Yukon Gold or Russet potatoes. Place the potatoes in a large pot of cold, salted water, and bring it to a boil over high heat. Once boiling, reduce to medium-low and cook for 15-20 minutes until tender. Drain the potatoes and return them to the pot. Mash with butter, milk, and a pinch of salt until creamy. Keep the mashed potatoes warm on the stove.
- In a separate saucepan, combine 1 pound of baby carrots with 2 tablespoons of butter, 2 tablespoons of brown sugar, a pinch of salt, and 1/4 cup of water. Cover the pan and simmer over medium heat for 10-12 minutes, until the carrots are tender. Uncover for the last 2-3 minutes to allow the liquid to reduce and create a sweet glaze that coats the carrots beautifully.
- Take 4 chicken breasts (or thighs) and season them generously on both sides with salt, pepper, garlic powder, dried thyme, and rosemary. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Once shimmering, add the chicken and sear for about 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Using the same skillet, add 2 cloves of minced garlic and sauté for 30 seconds until fragrant. Pour in 1 cup of chicken broth, scraping the bottom of the pan to deglaze it. Stir in 1 cup of heavy cream and 1/2 cup of grated Parmesan cheese. If you like, add 1 tablespoon of Dijon mustard for an extra flavor kick. Allow the sauce to simmer for 3-5 minutes until it thickens slightly.
- Return the seared chicken to the skillet with the herb cream sauce. Spoon the sauce over the chicken, allowing it to simmer for a couple of minutes to meld the flavors. Check that the chicken is heated through and the sauce is creamy and luscious.
- Plate the warm, fluffy mashed potatoes alongside the sweet, glazed carrots. Nestle the chicken in the middle and generously drizzle the creamy herb sauce over the top.
