  • 2 medium Zucchini fresh and firm
  • 1 medium Onion sweet or yellow, sliced
  • 3 tablespoons Soy Sauce low-sodium or keto-friendly
  • 1 tablespoon Oil e.g., sesame oil or avocado oil
  • 1 tablespoon Rice Vinegar or Lime Juice optional
For Garnish
  • 2 tablespoons Toasted Sesame Seeds for sprinkling

Method
 

Step-by-Step Instructions
  1. Wash the zucchini and onions. Slice the zucchini into thin ribbons or half-moons; cut the onion into thin wedges.
  2. Preheat a large wok or stir-fry pan over high heat for about 2 minutes.
  3. Add a tablespoon of oil to the hot wok and toss in the sliced onions. Stir continuously for 2-3 minutes until translucent and caramelized.
  4. Quickly add zucchini ribbons, stirring vigorously for 3-5 minutes until vibrant green but retain slight crunch.
  5. Pour in the soy sauce, mix well and cook for another 1-2 minutes ensuring every piece is coated.
  6. Remove from heat and transfer to a serving dish. Sprinkle with toasted sesame seeds before serving.
