- Preheat the oven to 400°F (200°C).
- Chop all the selected vegetables into uniform pieces, about one-inch in size.
- In a large mixing bowl, combine the chopped vegetables with olive oil, dried oregano, salt, and pepper. Toss well to coat.
- Spread the seasoned vegetable mixture evenly on a baking sheet.
- Place the baking sheet in the oven and roast the vegetables for about 25-30 minutes, stirring halfway through.
- Once the vegetables are roasted, remove from the oven and sprinkle feta cheese over them.
