  • 8 oz Fresh Lo Mein Noodles Or fresh ramen or dried egg noodles
For the Sauce
  • 2 tbsp Vegetable Oil Can use peanut oil for deeper flavor
  • 2 tbsp Light Soy Sauce Substitute with gluten-free soy sauce if needed
  • 1 tbsp Dark Soy Sauce Optional
  • 2 tbsp Oyster Sauce Can omit for vegetarian version
  • 1 tsp Granulated Sugar Can reduce or swap for other sweeteners
  • 1 pinch White Pepper Black pepper is a substitute
  • 1 tsp Cornstarch For thickening sauce
  • 1 tbsp Sesame Oil Optional but recommended
For the Aromatics
  • 3 cloves Garlic Minced
  • 1 tbsp Fresh Ginger Grated
  • 2 stalks Green Onions Chopped, white parts for cooking, green tops for garnish

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water over high heat. Once boiling, add the fresh lo mein noodles and cook for 4-6 minutes until al dente. Drain and toss with 1 tbsp vegetable oil.
  2. In a mixing bowl, whisk together 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 2 tbsp oyster sauce, 1 tsp sugar, and a pinch of white pepper. Mix in 1 tsp cornstarch dissolved in 1 tbsp water for thickness.
  3. Heat a wok over medium-high heat and add 2 tbsp vegetable oil. Add minced garlic, grated ginger, and white parts of the green onions, stir-frying for about 30 seconds until fragrant.
  4. Add cooked noodles to the wok, pour the sauce over, and toss together with tongs or a spatula for 2-3 minutes until heated through and slightly thickened.
  5. Sprinkle green parts of green onions on top, toss gently, and serve immediately while hot.
