Ingredients
  

For the Salad Base
  • 1 pound Ground Beef Substitute with ground turkey or plant-based crumbles.
  • 1 packet Taco Seasoning Use for convenience or make your own.
  • 4 cups Romaine or Iceberg Lettuce Chopped into bite-sized pieces.
  • 1 cup Cherry Tomatoes Diced; Roma tomatoes can be used.
  • 1 can Black Beans Drained and rinsed.
  • 1 cup Corn Canned or frozen.
  • 1 cup Shredded Cheddar Cheese or Mexican Blend Feel free to use other cheese blends.
For Crunch and Texture
  • 1 bag Nacho Cheese Doritos Alternatives include Cool Ranch or Spicy Sweet Chili.
For the Dressing
  • 1 bottle Catalina or Ranch Dressing Thousand Island is also a good alternative.
Optional Add-Ons
  • 1 small Red Onion Omit or substitute with green onions.
  • Black Olives Optional based on taste preferences.

Method
 

Step-by-Step Instructions
  1. In a medium-high skillet, heat a splash of oil and add ground beef. Brown for 6-8 minutes until fully cooked, drain excess fat, then stir in taco seasoning and a splash of water. Simmer for an additional 2-3 minutes.
  2. While the beef is cooking, wash and chop the lettuce and dice the cherry tomatoes. Prepare any optional toppings like red onion or black olives.
  3. In a large mixing bowl, combine lettuce, tomatoes, black beans, and corn. Mix gently to create a salad base.
  4. Add the cooked ground beef to the salad base and toss gently to distribute evenly.
  5. Just before serving, crush the Nacho Cheese Doritos over the top of the salad.
  6. Drizzle your choice of dressing over the salad and toss gently to coat all ingredients.
  7. Serve the salad immediately while the chips are crispy.
