  • 2 sticks Cinnamon Whole
  • 3 pieces Star Anise
  • 1 tbsp Salt
For the Soup
  • 1 lb Rice Noodles Flat
  • 2 cups Bean Sprouts Fresh
  • 1 cup Green Onions Chopped
  • 1 cup Cilantro Chopped
For Serving
  • 1 lime Lime Cut into wedges
  • 2 pieces Chili Peppers Sliced

Method
 

Preparing the Broth
  1. In a large pot, combine water, onion, ginger, cinnamon, star anise, and salt. Bring to a boil.
  2. Reduce heat and let it simmer for about 30 minutes to develop the flavors.
Cooking the Noodles
  1. While the broth simmers, cook rice noodles according to package instructions. Drain and set aside.
Assembling the Soup
  1. Remove the solids from the broth. In bowls, divide the noodles and top with bean sprouts, green onions, and cilantro.
  2. Ladle the hot broth over the noodles and toppings.
Serving the Soup
  1. Serve with lime wedges and sliced chili peppers on the side.
