Step‑by‑Step Instructions
  1. In a medium bowl, whisk together lime juice, avocado oil, chili powder, cumin, garlic powder, and salt. Marinate the chicken thighs for 15 to 30 minutes.
  2. Heat a skillet over medium-high heat. Sear the marinated chicken thighs for 8 to 10 minutes on each side until golden brown and cooked through.
  3. In a bowl, combine corn, red onion, sour cream, mayonnaise, and Cotija cheese. Add lime juice and chili powder to taste.
  4. Prepare rice until fluffy and warm, about 2 to 3 minutes in the microwave or about 5 minutes on the stove.
