Ingredients
  

For the Shrimp
  • 1 pound wild-caught shrimp fresh, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt to taste
For the Salsa
  • 1 large mango diced
  • 1 cup chopped tomatoes
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 2 tablespoons lime juice
For the Sauce
  • 1/2 cup Greek yogurt or mayo
  • 2 tablespoons chili sauce or Sriracha
For Serving
  • 2 cups cooked rice jasmine, brown, or cauliflower rice works well
  • 1 large avocado sliced

Method
 

Preparation
  1. In a medium bowl, combine shrimp with olive oil, garlic powder, paprika, and salt. Let marinate for about 15 minutes.
  2. Dice mango, tomatoes, red onion, and cilantro. Mix in a bowl with lime juice and a pinch of salt. Chill in the fridge.
  3. Preheat grill to medium-high heat (about 400°F). Grill shrimp for 2-3 minutes on each side until pink and slightly charred.
  4. In a small bowl, whisk Greek yogurt and lime juice with chili sauce until smooth. Adjust spiciness as desired.
  5. Layer cooked rice in serving bowls, top with grilled shrimp, avocado slices, and mango salsa. Drizzle with lime-chili sauce.

Notes
