- In a medium bowl, combine shrimp with olive oil, garlic powder, paprika, and salt. Let marinate for about 15 minutes.
- Dice mango, tomatoes, red onion, and cilantro. Mix in a bowl with lime juice and a pinch of salt. Chill in the fridge.
- Preheat grill to medium-high heat (about 400°F). Grill shrimp for 2-3 minutes on each side until pink and slightly charred.
- In a small bowl, whisk Greek yogurt and lime juice with chili sauce until smooth. Adjust spiciness as desired.
- Layer cooked rice in serving bowls, top with grilled shrimp, avocado slices, and mango salsa. Drizzle with lime-chili sauce.
