- In a mixing bowl, whisk together gochujang, miso paste, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth.
- Place the chicken thighs in a large resealable bag or dish and pour the marinade over them, coating well. Refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking dish with oil.
- Remove chicken thighs from marinade, place skin-side up in the baking dish, season with salt and pepper.
