  • 4 pieces Chicken Thighs bone-in, skin-on for maximum moisture
For the Marinade
  • 3 tablespoons Gochujang Korean chili paste
  • 2 tablespoons Miso Paste white for sweetness, red for stronger flavor
  • 1 tablespoon Soy Sauce or tamari for gluten-free
  • 1 tablespoon Honey or Maple Syrup natural sweetener
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 1 tablespoon Sesame Oil or vegetable oil
  • 2 cloves Garlic minced, or garlic powder
  • 1 tablespoon Ginger fresh, grated or ground ginger
  • to taste Salt
  • to taste Pepper
For Garnish
  • 2 tablespoons Sesame Seeds optional
  • 2 pieces Green Onions chopped

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together gochujang, miso paste, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth.
  2. Place the chicken thighs in a large resealable bag or dish and pour the marinade over them, coating well. Refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Lightly grease a baking dish with oil.
  5. Remove chicken thighs from marinade, place skin-side up in the baking dish, season with salt and pepper.
  6. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
  7. For extra crispiness, broil for 2-3 minutes, watching carefully.
  8. Let chicken rest for a few minutes, garnish with sesame seeds and green onions, and serve.
