Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped parsley, grated Parmesan, garlic powder, dried oregano, cumin, cinnamon, salt, and pepper. Use your hands to mix thoroughly.
  3. Form small meatballs, about 1-1.5 inches in diameter, and arrange on a lined baking sheet.
  4. Drizzle olive oil over the meatballs.
  5. Bake for 15-20 minutes, checking for a golden-brown exterior and internal temperature of 160°F (71°C).
  6. While the meatballs bake, cook your rice according to package instructions.
  7. In a separate bowl, toss together the cherry tomatoes, cucumber, red onion, and Kalamata olives.
  8. Allow the meatballs to rest for a few minutes after baking.
  9. In each serving bowl, start with a scoop of rice, layer veggie mix, and add meatballs.
  10. Drizzle tzatziki sauce over the bowls.
  11. Squeeze fresh lemon juice over each bowl.
