Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, chopped parsley, grated Parmesan, garlic powder, dried oregano, cumin, cinnamon, salt, and pepper. Use your hands to mix thoroughly.
- Form small meatballs, about 1-1.5 inches in diameter, and arrange on a lined baking sheet.
- Drizzle olive oil over the meatballs.
- Bake for 15-20 minutes, checking for a golden-brown exterior and internal temperature of 160°F (71°C).
- While the meatballs bake, cook your rice according to package instructions.
- In a separate bowl, toss together the cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Allow the meatballs to rest for a few minutes after baking.
- In each serving bowl, start with a scoop of rice, layer veggie mix, and add meatballs.
- Drizzle tzatziki sauce over the bowls.
- Squeeze fresh lemon juice over each bowl.
