Step-by-Step Instructions
  1. Begin by grating a two-inch piece of fresh ginger and preparing garlic and herbs if using.
  2. In a medium-sized pot, combine 4 cups of water or vegetable broth and grated ginger. Heat over medium and bring to a simmer for 5-7 minutes.
  3. Remove from heat and whisk in 3 tablespoons of miso paste until dissolved.
  4. Return to low heat, stir in 2 tablespoons of lemon juice, and add garlic or herbs if using. Adjust lemon juice to taste.
