Step-by-Step Instructions
  1. In a large pot over medium-high heat, add your Italian sausage. Cook for about 5-7 minutes, breaking it apart until browned.
  2. Drain excess fat and lower heat to medium. Add chopped yellow onion and sauté for about 4-5 minutes until translucent.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Pour in crushed tomatoes, beef stock, and a cup of water into the pot. Sprinkle in Italian seasoning and bring to a boil.
  5. Reduce heat to a gentle simmer, then stir in broken lasagna noodles. Cover and cook for about 15 minutes.
  6. Incorporate fresh basil into the soup. Adjust seasoning with salt and pepper.
  7. Ladle the soup into bowls, and top each serving with ricotta, Parmigiano-Reggiano, and mozzarella.
