Crust Preparation
- Crush 350g of Biscoff cookies into fine crumbs. Mix with 150g of melted unsalted butter. Press into a lined 9" springform pan and chill for 30 minutes.
Crumble Topping Preparation
- Combine 55g melted butter, 50g flour, 50g brown sugar, and 20g oats until crumbly. Set aside.
Apple Cooking
- Peel and slice tart apples. Cook with 50g brown sugar, a teaspoon of cinnamon, and 2 tsp cornstarch for 8-10 minutes until tender.
Oven Preheating
- Preheat oven to 325°F (163°C).
Cheesecake Batter Mixing
- Beat cream cheese, sugar, yogurt, vanilla, and ground spices until smooth.
Egg Incorporation
- Add eggs one at a time, mixing well after each addition.
Cheesecake Assembly
- Pour batter over chilled crust, layer the cooked apples, and sprinkle crumble topping.
Cheesecake Baking
- Bake for 65-70 minutes until edges are set and center has a slight jiggle.
Cooling and Chilling
- Let cool for 1 hour, then refrigerate for at least 6 hours or overnight.
