Method
 

Crust Preparation
  1. Crush 350g of Biscoff cookies into fine crumbs. Mix with 150g of melted unsalted butter. Press into a lined 9" springform pan and chill for 30 minutes.
Crumble Topping Preparation
  1. Combine 55g melted butter, 50g flour, 50g brown sugar, and 20g oats until crumbly. Set aside.
Apple Cooking
  1. Peel and slice tart apples. Cook with 50g brown sugar, a teaspoon of cinnamon, and 2 tsp cornstarch for 8-10 minutes until tender.
Oven Preheating
  1. Preheat oven to 325°F (163°C).
Cheesecake Batter Mixing
  1. Beat cream cheese, sugar, yogurt, vanilla, and ground spices until smooth.
Egg Incorporation
  1. Add eggs one at a time, mixing well after each addition.
Cheesecake Assembly
  1. Pour batter over chilled crust, layer the cooked apples, and sprinkle crumble topping.
Cheesecake Baking
  1. Bake for 65-70 minutes until edges are set and center has a slight jiggle.
