- Start by cutting your tender steak into bite-sized cubes. Season with salt and pepper. Let rest for 10 minutes.
- Place a large skillet over medium-high heat and add 2 tablespoons of unsalted butter. Melt completely.
- Add the marinated steak bites to the skillet in a single layer and sear for 2-3 minutes.
- Flip the steak bites and add minced garlic. Cook for another 2-3 minutes until desired doneness.
- Remove the steak from the skillet and cover to keep warm.
- In the same skillet, melt 2 tablespoons of butter and add 1/2 cup of heavy cream. Simmer for 2 minutes.
- Whisk in 1/2 cup of freshly grated Parmesan cheese until smooth. Simmer for another minute.
- Return the steak bites to the skillet, tossing them in the sauce, and heat through for 1-2 more minutes.
- Taste and adjust seasoning. Serve immediately garnished with chopped chives.
