For the Topping
  • 1 tbsp Reserved cinnamon sugar mixture Sprinkle on top for extra burst of flavor.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a small bowl, combine the brown erythritol and cinnamon for the cinnamon sugar mixture.
  3. Whisk together the eggs, melted butter, and vanilla extract in a larger mixing bowl.
  4. Gradually add the almond flour, coconut flour, and baking powder to the wet mixture.
  5. Gently fold in the reserved cinnamon sugar mixture into the batter.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining cinnamon sugar mixture on top.
  7. Bake for about 30 minutes, or until a toothpick inserted comes out mostly clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack.
