  • 1 teaspoon Maple Extract or additional maple syrup
  • 1.75 cups All-Purpose Flour or gluten-free flour
  • 1 teaspoon Ground Cinnamon
  • 0.25 teaspoon Ground Nutmeg or ginger/cardamom
  • 0.5 teaspoon Baking Soda
  • 1 pinch Salt
  • 0.25 cup Granulated Sugar (for rolling)

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the butter and sugars until light and fluffy for 2-3 minutes.
  3. Mix in the egg yolk, corn syrup, vanilla extract, and maple extract until smooth.
  4. In another bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Shape the dough into 1.5-inch balls and roll in granulated sugar.
  7. Place the dough balls on the baking sheets, spaced about 2 inches apart, and bake for 10-12 minutes.
  8. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.
