Ingredients
  

For the Salad
  • 16 oz Pasta Use gluten-free pasta if needed
  • 0.5 medium Red Onion Green onions can be an alternative
  • 2 cups Cherry Tomatoes Substitute with other tomatoes if desired
  • 12 oz Jar of Roasted Red Peppers Fresh bell peppers can be used
  • 1 can Artichoke Hearts Olives or other pickled veggies make tasty swaps
  • 1 can Cannellini Beans Any bean variety can work
  • 6 oz Pepperoni or Salami Replace with sliced mushrooms or vegan deli slices for vegetarian options
  • 8 oz Mozzarella Opt for dairy-free cheese to make it vegan
  • 0.25 cup Fresh Basil Dried basil can be a substitute but fresh is best
  • Grated Parmesan Optional
For the Dressing
  • 0.25 cup Extra Virgin Olive Oil
  • 2 Tbsp Red Wine Vinegar White wine vinegar works as an alternative
  • 2 Tbsp Lemon Juice Lime juice can be used as a substitute
  • 2 Cloves Garlic Garlic powder can be used if needed
  • 2 Tsp Dried Italian Herbs Mix of oregano and thyme works well

Method
 

Cooking Instructions
  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-11 minutes. Drain and rinse under cold water.
  2. Prepare vegetables and proteins by draining and rinsing canned ingredients and chopping fresh produce. Slice pepperoni or salami as needed.
  3. Make the dressing by combining olive oil, red wine vinegar, lemon juice, minced garlic, and Italian herbs in a bowl. Whisk until blended.
  4. Combine cooled pasta with prepared vegetables, beans, and meats in a large mixing bowl.
  5. Toss the pasta salad with the dressing, adjusting seasoning with salt and pepper.
  6. Garnish with fresh basil and optional grated Parmesan before serving.
