Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and prepare your baking sheet by lining it with parchment paper or greasing a loaf pan.
  2. In a large mixing bowl, combine the ground chicken, shredded Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, parsley, salt, and black pepper. Pour in whole milk and mix gently.
  3. Shape the mixture into a loaf and place it on the prepared baking sheet or into the loaf pan.
  4. Bake in the preheated oven for 40 to 45 minutes, using a meat thermometer to check for an internal temperature of 74°C (165°F).
  5. For the glaze, melt two tablespoons of butter in a saucepan, add minced garlic, cook until fragrant, then stir in additional Parmesan and parsley until smooth.
  6. Brush the prepared glaze over the meatloaf and return to the oven for another 5 to 7 minutes.
  7. Let the meatloaf rest for 5 minutes out of the oven to retain moisture.
  8. Slice into portions and garnish with fresh parsley before serving.
