  • 2 medium Zucchini hollowed
For the Filling
  • 2 cups Cooked Chicken shredded, rotisserie chicken recommended
  • 1 cup Marinara Sauce homemade or sugar-free
For the Cheesy Topping
  • 1 cup Mozzarella Cheese shredded, dairy-free optional
  • 1/4 cup Parmesan Cheese grated, can be omitted
For Flavoring
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers to form boats. Sprinkle with salt and let sit for 10 minutes.
  3. In a skillet, combine cooked chicken and marinara sauce over medium heat for 5-7 minutes.
  4. Rinse and pat the zucchini dry, fill them with chicken and marinara mixture, and top with cheese.
  5. Bake for 25-30 minutes until cheese is bubbly and zucchinis are tender.
  6. Optional: Broil for an additional 2-3 minutes for a crispy finish.
