Method
 

Preparation
  1. Wash the cucumbers thoroughly and slice them into thin rounds. Place in a mixing bowl and sprinkle with salt. Allow them to rest for about 10 minutes.
  2. In a separate bowl, whisk rice vinegar, soy sauce, chili flakes, sugar, and sesame oil until well combined.
  3. After the cucumbers have rested, drain excess liquid and add them to the bowl with the dressing. Gently toss to coat.
  4. Sprinkle with sesame seeds and chopped green onions. Toss again gently to incorporate.
  5. Cover and chill in the refrigerator for 15-20 minutes before serving.
