Step-by-Step Instructions
  1. Begin by placing lemon zest, lemon juice, full-fat coconut milk, optional water, your sweetener of choice, a pinch of salt, and turmeric in a blender. Blend the mixture on high for about 30 seconds until it’s completely smooth.
  2. Add the chia seeds to the blended mixture in the blender and pulse it once or twice to stir them in gently.
  3. Taste the mixture and adjust its sweetness or tartness according to your preference, adding more lemon juice or sweetener if needed.
  4. Pour the pudding mixture into serving glasses or bowls, cover with plastic wrap, and chill in the refrigerator for at least 4 hours or overnight.
  5. Top each pudding with whipped coconut cream and a sprinkle of extra lemon zest before serving.
