  • 2-3 units roma or Campari tomatoes choose for best flavor
  • 8 ounces fresh mozzarella use high-quality
  • 10-12 leaves fresh basil leaves larger leaves for presentation
For the Dressing
  • 3 tablespoons extra virgin olive oil for drizzling
  • 2 tablespoons balsamic glaze or vinegar preferably sugar-free
  • to taste sea salt for seasoning
  • to taste black pepper freshly ground

Method
 

Preparation
  1. Wash the tomatoes thoroughly under cold water. Slice each into ½-inch thick rounds.
  2. Cut the fresh mozzarella into similar ½-inch thick slices.
  3. Layer the sliced tomatoes and mozzarella on a serving platter, overlapping slices.
  4. Tuck fresh basil leaves between the layers.
  5. Drizzle olive oil and balsamic glaze over the salad.
  6. Sprinkle with sea salt and black pepper to taste.
