Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch square pan with foil and non-stick spray.
  2. Melt the unsalted butter and combine it with all-purpose flour, oats, granulated sugar, brown sugar, and salt until sandy.
  3. Press two-thirds of the mixture into the prepared pan to form the crust base and set aside the rest for topping.
  4. In a separate bowl, mix diced mango, sugar, lemon juice, and corn starch until well coated.
  5. Spread the mango mixture evenly over the crust in the pan.
  6. Sprinkle the reserved crumble mixture on top of the mango filling and gently press down.
  7. Bake for 50-55 minutes until edges are set and center is firm.
  8. Let cool in the pan for at least one hour before lifting out and slicing into squares.
