- Preheat the oven to 350°F (175°C) and prepare an 8-inch square pan with foil and non-stick spray.
- Melt the unsalted butter and combine it with all-purpose flour, oats, granulated sugar, brown sugar, and salt until sandy.
- Press two-thirds of the mixture into the prepared pan to form the crust base and set aside the rest for topping.
- In a separate bowl, mix diced mango, sugar, lemon juice, and corn starch until well coated.
- Spread the mango mixture evenly over the crust in the pan.
- Sprinkle the reserved crumble mixture on top of the mango filling and gently press down.
- Bake for 50-55 minutes until edges are set and center is firm.
- Let cool in the pan for at least one hour before lifting out and slicing into squares.
