  • 1/2 cup Red onion finely chopped; soak in water for milder flavor
  • 1/2 cup Olives Kalamata or green
For the Dressing
  • 1/4 cup Olive oil extra virgin
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Pepper
For the Garnish
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh parsley chopped

Step-by-Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil. Add your pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta cooks, wash and chop your vegetables. Halve the cherry tomatoes, dice the cucumbers, chop the bell peppers and red onion.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, and Dijon mustard. Add minced garlic, salt, and pepper.
  4. Once your pasta has cooled, add it to the large bowl of chopped vegetables. Pour the dressing over the mixture and gently toss to combine.
  5. Add crumbled feta cheese and chopped parsley. Mix gently to incorporate.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
