  • 0.5 tsp Black Pepper Freshly ground is recommended.
  • 1 cup Low-Sodium Chicken Broth Vegetable broth is a good alternative.
  • 2 cups Shredded Sharp Cheddar Cheese Substitute with dairy-free cheese for a lactose-free option.
  • 2 cups Half-and-Half or Heavy Cream Substitute with coconut milk or cashew cream for a dairy-free version.

Preparation Steps
  1. Begin by lightly spraying the inside of your slow cooker with cooking spray to prevent sticking.
  2. Into the prepared slow cooker, place the chicken, minced garlic, cream-style sweet corn, frozen fire-roasted corn, black beans, diced green chiles, chili powder, smoked paprika, ground cumin, salt, and black pepper. Stir gently to combine.
  3. Cover and set the slow cooker to cook on high for 3–5 hours, or low for 4–6 hours.
  4. Once cooked, carefully lift the chicken out and shred it using two forks, then return it to the chowder.
  5. Gradually stir in the shredded sharp cheddar cheese followed by the half-and-half or heavy cream until well blended.
  6. Ladle the chowder into bowls and add your favorite toppings like tortilla chips, cilantro, or avocado.
