  • 1 cup Graham Crackers or Digestive Biscuits
  • 4 tbsp Unsalted Butter melted
For the Filling
  • 2 cups Fresh or Frozen Blueberries if using frozen, thaw and drain excess liquid
  • 1/4-1/2 cup Granulated Sugar or Sweetener adjust based on blueberry ripeness
  • 1 cup Greek Yogurt or Cream Cheese use plant-based yogurt for vegan option
  • 2 tbsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 1 pinch Salt
  • 1/4 cup Chia Seeds adjust for thickness
For the Garnish
  • Optional Garnishes Fresh blueberries, lemon zest, and mint leaves

Method
 

Prepare the Crust
  1. Crush the graham crackers in a food processor until fine crumbs. Mix with melted butter or coconut oil and press into a 9-inch pie dish. Chill for 15 minutes.
Make the Blueberry Chia Filling
  1. Mash or blend the blueberries until mostly smooth. Stir in chia seeds, sugar, lemon juice, and salt. Let sit for 5-10 minutes to thicken.
Incorporate Yogurt or Cream Cheese
  1. Fold in Greek yogurt or cream cheese until smooth and well combined.
Assemble the Pie
  1. Pour the blueberry chia mixture into the chilled crust and smooth the top. Chill in the refrigerator for at least 2 hours.
Garnish and Serve
  1. Garnish with fresh blueberries, lemon zest, or mint leaves. Slice and serve chilled.
