Prepare the Crust
- Crush the graham crackers in a food processor until fine crumbs. Mix with melted butter or coconut oil and press into a 9-inch pie dish. Chill for 15 minutes.
Make the Blueberry Chia Filling
- Mash or blend the blueberries until mostly smooth. Stir in chia seeds, sugar, lemon juice, and salt. Let sit for 5-10 minutes to thicken.
Incorporate Yogurt or Cream Cheese
- Fold in Greek yogurt or cream cheese until smooth and well combined.
Assemble the Pie
- Pour the blueberry chia mixture into the chilled crust and smooth the top. Chill in the refrigerator for at least 2 hours.
Garnish and Serve
- Garnish with fresh blueberries, lemon zest, or mint leaves. Slice and serve chilled.
