- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a large mixing bowl, whisk together 1 cup of creamy peanut butter, 1 cup of Greek yogurt, 1/3 cup of maple syrup (or honey), 1 large egg, and 1 teaspoon of vanilla extract until smooth.
- Gently fold in 1 1/2 cups of oats (or oat flour), 1 teaspoon of baking soda, and a pinch of sea salt until combined.
- Fold in 1/2 cup of chocolate chips, reserving some for sprinkling on top later.
- Spread the batter into the prepared baking dish and sprinkle reserved chocolate chips on top.
- Bake for 20–25 minutes until edges are golden brown and a toothpick comes out mostly clean.
- Remove from oven and let cool completely in the pan before slicing into squares.
