Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together 1 cup of creamy peanut butter, 1 cup of Greek yogurt, 1/3 cup of maple syrup (or honey), 1 large egg, and 1 teaspoon of vanilla extract until smooth.
  3. Gently fold in 1 1/2 cups of oats (or oat flour), 1 teaspoon of baking soda, and a pinch of sea salt until combined.
  4. Fold in 1/2 cup of chocolate chips, reserving some for sprinkling on top later.
  5. Spread the batter into the prepared baking dish and sprinkle reserved chocolate chips on top.
  6. Bake for 20–25 minutes until edges are golden brown and a toothpick comes out mostly clean.
  7. Remove from oven and let cool completely in the pan before slicing into squares.
