  • 2 cups Seafood Stock Homemade or store-bought.
  • 1 leaf Bay Leaf Remove before serving.
  • 1 teaspoon Red Pepper Flakes Adjust based on desired spice level.
  • to taste Salt Essential for seasoning.
  • to taste Black Pepper Essential for seasoning.
For Finishing Touches
  • ¼ cup Fresh Parsley Chopped, or basil/cilantro as alternatives.

Step-by-Step Instructions
  1. Rinse the calamari under cold water and pat dry.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Sauté 1 diced onion for 3-4 minutes until softened.
  4. Add 4 minced garlic cloves and cook for 30 seconds until fragrant.
  5. Pour in 1 cup of white wine, bring to a gentle simmer and cook for 2 minutes.
  6. Stir in 2 cups of seafood stock, 1 bay leaf, 1 teaspoon of red pepper flakes, salt, and pepper.
  7. Let the mixture simmer gently for 5 minutes, stirring occasionally.
  8. Carefully add the calamari and poach for 2-3 minutes until opaque and tender.
  9. Remove from heat, stir in ¼ cup of chopped parsley and lemon juice, and adjust seasoning.
  10. Ladle into bowls and serve warm with lemon wedges and crusty bread.
