Step-by-Step Instructions for Salsa Verde Chicken Casserole
- Preheat your oven to 375°F (190°C) and grease a 9×12-inch casserole dish with olive oil.
- Heat a tablespoon of olive oil in a skillet over medium heat. Add chopped onion and sauté for about 5 minutes until softened.
- Stir in minced garlic, chili powder, and cumin, cooking for an additional minute.
- In a separate bowl, mix together green salsa and sour cream until smooth.
- Spread ¾ cup of the salsa verde mixture over the bottom of the greased casserole dish. Layer half of the tortilla halves, half of the chicken mixture, and pour 1 cup of salsa verde sauce over. Sprinkle with ½ cup of cheese.
- Repeat the layering process with the remaining tortillas, chicken, salsa verde sauce, and top with remaining cheese.
- Bake for 15-20 minutes, or until the cheese is melted and bubbling.
- Remove from the oven and let cool for about 5 minutes before serving.
