  • 4 pieces Chicken Thighs or Breasts Use thighs for extra juiciness.
  • 1 small Lime Juice Juice from a small lime.
  • 2 tablespoons Neutral Vegetable Oil Can swap with canola or olive oil.
For the Flavoring
  • 1/4 cup Soy Sauce Low sodium is recommended.
  • 2 tablespoons Fish Sauce Worcestershire sauce can be used as a substitute.
  • 2 tablespoons Brown Sugar Essential for caramelization.
  • 2 cloves Minced Garlic Infuses the chicken with flavor.
  • 1 tablespoon Fresh Grated Ginger Ground ginger can be used if fresh isn’t available.
  • 1 teaspoon Red Chili Flakes Adjust to spice preference.
  • 1/4 cup Cilantro For garnish.

Method
 

Cooking Steps
  1. Trim excess fat from the chicken and pound to an even thickness of about ¾ inch.
  2. Combine lime juice, oil, soy sauce, fish sauce, brown sugar, garlic, ginger, chili flakes, and cilantro in a bowl or ziplock bag. Add the chicken and coat thoroughly.
  3. Preheat the grill to medium-high heat at around 400°F (204°C) and oil the grill grates.
  4. Grill the chicken for about 3-5 minutes on each side until the internal temperature reaches 160°F (71°C).
  5. Remove from the grill and let rest for 5 minutes before slicing. Serve with cilantro and grilled green onions if desired.
