  • 2 cups Cherry Tomatoes Diced
  • 1 cup Mozzarella Cheese Shredded
  • 1/2 cup Parmesan Cheese Grated, optional
  • 1/4 cup Fresh Basil For garnish

Cooking Steps
  1. Preheat your oven to 190°C (375°F).
  2. In a large bowl, combine chicken with olive oil, minced garlic, Italian seasoning, salt, and pepper.
  3. Heat a skillet over medium-high heat, sear the chicken until golden brown, about 2-3 minutes per side.
  4. Transfer the chicken to a baking dish in a single layer.
  5. Layer diced cherry tomatoes over the chicken, then sprinkle shredded mozzarella and grated Parmesan on top.
  6. Bake for 20-25 minutes, until cheese is melted and chicken reaches an internal temperature of 75°C (165°F).
  7. Garnish with fresh basil and drizzle with balsamic glaze before serving.
