Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and a large baking dish.
  2. In a large mixing bowl, combine chicken, olive oil, lemon juice, garlic, oregano, cumin, paprika, coriander, salt, and pepper. Marinate for 15 minutes.
  3. Slice zucchini and onions, and halve the tomatoes. Spread them evenly in the baking dish.
  4. Nestle the marinated chicken into the baking dish among the vegetables. Pour any leftover marinade over the top.
  5. Bake uncovered for 30 to 40 minutes or until chicken reaches 165°F (74°C).
  6. If using, sprinkle feta cheese over the bake during the last 5 to 10 minutes.
  7. Remove from oven, let cool slightly, and garnish with fresh parsley before serving.
