- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface until smooth and about 1/8 inch thick.
- Spread Dijon mustard evenly over the puff pastry, leaving a 1-inch border.
- Layer diced ham and shredded sharp cheddar cheese over the mustard evenly.
- Starting from one long side, carefully roll the pastry tightly into a log and refrigerate for 30 minutes.
- Slice the chilled log into bite-sized pinwheels, approximately 1 inch thick.
- Place sliced pinwheels on the prepared baking sheet and brush with egg wash if desired.
- Bake for 15-20 minutes until golden brown and puffed.
- Allow to cool slightly before serving warm.
