- In a large mixing bowl, combine your leftover mashed potatoes with shredded cheese, breadcrumbs, egg, garlic powder, onion powder, parsley, salt, and pepper. Blend until cohesive.
- Take portions of the mixture and roll them into smooth balls or shape into patties. Place on a parchment-lined baking sheet.
- Heat olive oil in a large frying pan over medium heat for about 2 minutes until shimmering.
- Carefully add the formed puffs to the pan in a single layer and fry for 3-4 minutes on one side until golden brown. Flip and cook for an additional 3-4 minutes.
