Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook the bacon in a skillet over medium heat until crispy, about 7–10 minutes. Let it cool and chop into pieces.
  3. On the prepared baking sheet, arrange the chicken, drizzle with olive oil, make sure to season with lemon pepper and bake for 18-20 minutes until cooked.
  4. Let the chicken rest for 5 minutes, then shred into bite-sized pieces.
  5. Mix the shredded chicken with ½ to ¾ cup of BBQ sauce until evenly coated.
  6. On a clean baking sheet, layer the tortilla chips, half of the cheddar and Monterey Jack cheese, BBQ chicken, chopped bacon, and red onion.
  7. Reduce the oven temperature to 325°F (160°C) and bake for 10-15 minutes until cheese is melted.
  8. Garnish with chopped cilantro and serve immediately.
