For the Dressing
  • 1/3 cup Olive Oil
  • 1/4 cup Lime Juice freshly squeezed
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Southwest Spice Blend or Cumin
  • 1 tablespoon Honey or Maple Syrup for vegan option
  • 1 clove Garlic minced

Method
 

Dressing

Salad Base
  1. In a large mixing bowl, combine black beans, black-eyed peas, corn, red cabbage, orange pepper, red onion, cherry tomatoes, and jalapeno, ensuring even distribution.
Combine
